My preferred method for getting hill fit is to go to the hills

And the best method to retain that fitness is to go to the hills frequently - very frequently.

got some cracking steep hills that I've been doing my fell running training on - I say fell running, but I really mean fell walking when going up hill and fell running downhill - but it really improves fitness exponentially - unless you are already fit of course, then it just makes you a bastard (to me anyway)

Easiest way to retain walking fitness is to just build in 4-6 miles of walking into your daily routine. Mildly lengthens commutes I guess but much more pleasant anyway.

All a good exercises, but some/most people don't have the time, or the equipment to do them!
One not mentioned is normal stairs, go up and down as many times as can, when gets 'comfortable', add some weight. I use a rucksack and milk cartons/'pop' bottles filled with water. As a ltr of water is a kg. I know how much I'm carrying. I add more weight as needed.

I don't find hill walking particularly demanding, I do mean walking tho, not running. For my purposes its stamina that's needed so acclimatization is what I seek. For that, there's no substitute for miles.
